Frog Eye Salad

Ingredients:


1 cup Sugar

1/2 teaspoon Salt

2 large Eggs, beaten

1 pound Acini De Pepe Find in pasta section

40 ounces pineapple chunks Drained, reserve juice

1 cup Miniature marshmallows

2 tablespoons Flour

1 3/4 cups Pineapple juice

1 tablespoons Lemon juice

33 ounces mandarin oranges Drained

9 ounces non-dairy whipped

---Topping

1 cup Flaked coconut
 

Preparation / Directions:


Combine sugar, flour and salt. Stir in pineapple juice and eggs. Cook, stirring constantly until thickened. Add lemon juice, cool to room temperature. Prepare Acini De Pepe according to pkg directions. drain. Combine egg mixture and Acini De Pepe, mix well and refrigerate overnight in airtight container. Add remaining ingredients and mix thoroughly. Refrigerate until completely chilled.
